I love Mexican food. I’ve talked about this before in my previous blog post about eating food from different cultures (linked here if you want to read the entire post and learn about what other cuisines you should try asap and how to do so) but we can quickly recap. I wasn’t really aware of what Mexican food was until I moved to the U.S. I remember watching Mean Girls and having no clue what Taco Bell was. So when I came here especially since here was Houston, Texas where tex mex (Texas Mexican) food is extremely popular. All of a sudden I was eating quesadillas, enchiladas, tacos, fajitas, caldo de res, pozole and more. It really did change my life. I can’t imagine life without Mexican food. Ever.
But the thing with Mexican food is that it's super carby. I mean there’s literally carbs in pretty much every meal.
So let’s talk about low carb tacos. I fucking love them and even my boyfriend who’s Mexican said they’re delicious (that’s a mega win for me). And though nothing will beat a homemade tortilla, you can leave that for an indulgence and eat low carb tacos every day of your life if you wanted to. Not a bad way to live right?
